500g King fish or marlin (generally 1 packet of 2 pieces)
8-10 Large potatoes
½ Diced sweet pepper
½ Diced onion
1 Cup grated cheddar
1 Lime
1 Clove of garlic
1 Teaspoon olive oil
¼ Cup ketchup
3 Teaspoons Salt
1 Teaspoon Bajan Seasoning
1 Teaspoon Fish /All Purpose Seasoning
1 Teaspoon Hot Pepper Sauce

  1. Peel potatoes, boil with 1 teaspoon of salt and mash once soft. 
  2. Squeeze lime into a bowl with 2 teaspoons of salt and rub into fish – leave for 5 mins.
  3. Rinse fish, dice into chunks, add Bajan seasoning and marinate for 15 mins.
  4. Fry the sweet pepper, onion and garlic in a pan with the olive oil.
  5. Add seasoned fish and stir until lightly cooked.
  6. Add the fish / all purpose seasoning, hot pepper sauce and ketchup.
  7. Place cooked fish sauce into a baking dish, add mashed potatoes and top with grated cheese.

Bake 350F on medium height shelf for 30 minutes until cheese golden.
